Earlier this month I posted about FREE cookies March 1.  Here is your reminder as tomorrow is March 1st already!  I am looking at their ad now and it states FREE Chips Ahoy cookies are on us.  Go HERE on Facebook.  To get the FREE cookies, you must buy 1 package of Nabisco cookies and 1 gallon of milk to get the 2nd package of cookies FREE.  They are giving out 500,000 coupons.  Limit 1 per household.

I always like to stock up on these when they go on sale...peel and freeze the bananas and drop them in a blender for a yummy smoothie.  The pineapples are great for juicing.  My kids love it!

Saturday Snack - Chocolate Chip Muffins - Gluten Free

2cups brown rice flour mix
1cup granulated sugar
1T.baking powder
1tsp. baking soda
3/4 tsp xanthum gum
1/4 tsp.salt
1 1/2 cups Chocolate Chips
1/2 cup milk
1/2 cup canola oil
2 large eggs
1 tsp. pure vanilla extract
Preheat oven to 375. Use center oven rack and grease muffin pans

Mix flour, sugar, baking powder, soda, xanthum gum, salt and nutmeg in lg.bowl.
Combine milk and oil in small bowl beat in eggs and vanilla.  Add liquids to dry mixture and stir until blended.  Add choc. chips. Stir.  Fill muffin pans 2/3 full  bake 18-25 min. until light golden.

  Remove from oven and serve immediately.  These hold up great in the fridge.  They don't last much longer than 2 days at our house.  Choc. chip muffins makes about 12.  I had sprinkled some cinn. sugar on top before baking.  Enjoy!

Weekly Meal Deal

Do you know what is for dinner tonight?  This seems to be such an issue for me lately.  I am stocked full of meats, pastas (gluten free of course), sauces, sides, etc... but our life seems to be so CRAZY that it is hard to get dinner put together.  It always does, maybe not the way I would like, but I get it done.  With my oldest's wheat allergy, it makes it nearly impossible to eat out.  So I cook dinner EVERY night.

One of my goals with this blog is to help me be more organized with my recipes and meal plans.  I am working on some great things for March so be sure to stay tuned!

I posted Amanda from A Few Short Cut's  Tide You Over Tuesday Recipe this week.  She also does a Weekly Meal Deal.  She makes a meal with the items that are on sale at Publix for the week.  She takes step by step pictures, lists all the ingredients and even breaks it down by price.  This week she has made Cheesy Chili Mac.  It only cost $1.46 per person!   The only thing I would use different would be Tinkyada Organic Brown Rice Pasta Elbows to make it gluten free!  I have all the ingredients for this one...probably what we are having for dinner tonight or tomorrow!  Thanks Amanda!

Disney's Give a Day Get a Day

 

The first week of February we had the opportunity to take our 4 children to Disneyworld for the first time.  We had such an amazing time!  We are also planning to head to California this summer for my brother in law's graduation getting his doctorate.  So, we are planning to take all the kids, my 4 and my nieces and nephew to Disneyland for a day!  We are participating in the Give a Day Get a Day Disney Campaign.  Basically you find somewhere in your area that is particpating, you sign up to volunteer, and you get a FREE ticket to Disneyworld or Disneyland!  With a family of 6 this is a savings of about $400!  If you are planning to take a trip this year I would encourage you to participate.  They only have 1,000,000 tickets available and last I heard, they have given out around 600,000 of those.   What a great opportunity to serve in your community as well!  We are making dinner for 30-40 women and children and serving them the meal.  This will be a great thing for my children to be involved in.  And with my stockpile of groceries and buying with coupons, I estimate it will only cost $10-$20 to serve 40 people! Saturday Snack - EASY Chocolate Mousse

 

Only 4 ingredients

1pkg Chocolate Pudding

1 can condensed sweetened milk

1  8oz. cool whip

1 cup water (if sm. box pudding used)  1 1/2 cups water (if large box pudding is used)

Pour all ingredients into bowl and mix well using a wire beater until there are no lumps

Fold in cool whip

Chill 30 minutes

Serve!  Easiest snack/dessert and it is delicious! Enjoy!

Looks like there will be 3 inserts in the paper this week.  1 SmartSource (SS) and 1 RedPlum (RP) and 1 P&G.   The P&G ad alone has over $73.00 worth of savings.   You can find the complete list of what coupons will be in the paper here.  This helps if you are planning how many papers to purchase.   You can also print coupons online from these 2 companies online ( RP) and (SS).
